🥑 Creamy avocado salad
A vibrant mix of creamy avocado, juicy tomatoes, and crisp cucumber, all drizzled with a zesty lime dressing, this salad is summer in a bowl!
📝 Ingredients (serves 4)
- ¼ cup extra virgin olive oil 
- Juice of 1 lemon 
- ¼ teaspoon ground cumin 
- Salt to taste 
- Freshly ground black pepper to taste 
- 3 ripe avocados, cubed 
- 16 oz cherry tomatoes, halved 
- 1 small cucumber, sliced into half-moons 
- ⅓ cup corn kernels 
- 1 jalapeño, finely chopped (optional) 
- 2 tablespoons chopped cilantro 
🍳 Instructions
1. Prepare the dressing
- In a small bowl, whisk together the olive oil, lemon juice, cumin, salt, and pepper. 
2. Combine the salad ingredients
- In a large bowl, gently combine the cubed avocados, halved cherry tomatoes, cucumber slices, corn, jalapeño (if using), and cilantro. 
3. Dress the salad
- Pour the dressing over the salad and gently toss to coat. 
4. Serve
- Serve immediately or chill for later. 
🌿 Kuisit Tip
For the best flavor, use ripe but firm avocados. If you want to make it ahead of time, toss the avocados with a little extra lemon juice to prevent browning. Serve with tortilla chips for a satisfying snack or as a side to grilled chicken or fish.
