🥑 Creamy Avocado Salad

A vibrant mix of creamy avocado, juicy tomatoes, and crisp cucumber, all drizzled with a zesty lime dressing—this salad is summer in a bowl!

📝 Ingredients (serves 4)

  • ¼ cup extra virgin olive oil

  • Juice of 1 lemon

  • ¼ teaspoon ground cumin

  • Salt to taste

  • Freshly ground black pepper to taste

  • 3 ripe avocados, cubed

  • 16 oz cherry tomatoes, halved

  • 1 small cucumber, sliced into half-moons

  • ⅓ cup corn kernels

  • 1 jalapeño, finely chopped (optional)

  • 2 tablespoons chopped cilantro

🍳 Instructions

1. Prepare the dressing

  • In a small bowl, whisk together the olive oil, lemon juice, cumin, salt, and pepper.

2. Combine the salad ingredients

  • In a large bowl, gently combine the cubed avocados, halved cherry tomatoes, cucumber slices, corn, jalapeño (if using), and cilantro.
