🫘 White Bean & Tomato Salad

📝 Ingredients (serves 2)

  • 250 g white beans (canned, rinsed and drained, or freshly cooked)

  • 1 clove garlic, minced

  • 1 handful of parsley or cilantro, chopped

  • 1 pinch of salt

  • 1 pinch of white pepper

  • 1 pinch of chili flakes

  • 1 tablespoon white or wine vinegar

  • 2 tablespoons of Extra virgin olive oil

  • 1 cup cherry tomatoes, halved

  • ¼ red onion, thinly sliced

🍳 Instructions

1. Prepare the dressing

  • In a small bowl, whisk together the minced garlic, chopped parsley or cilantro, salt, white pepper, chili flakes, white or wine vinegar, and Extra virgin olive oil.

2. Combine ingredients

  • In a mixing bowl, gently combine the cooked white beans, halved cherry tomatoes, and thinly sliced red onion.

3. Dress the salad

  • Pour the dressing over the salad and gently toss to coat.

4. Marinate (optional)

  • For enhanced flavor, allow the salad to marinate in the refrigerator for at least 30 minutes before serving.

5. Serve

  • Serve chilled or at room temperature.

🌿 Kuisit Tip

If using canned beans, rinse them thoroughly to remove excess starch. The red onion can be soaked in cold water for a few minutes to reduce its sharpness. Serve with a sprinkle of extra herbs and a drizzle of olive oil for added flavor.
