🫘 White bean & tomato salad
Simple Flavors, Fresh Delight Tender white beans, fragrant herbs, and a zesty vinaigrette, perfect as a light lunch or a flavorful side.
📝 Ingredients (serves 2)
- 250 g white beans (canned, rinsed and drained, or freshly cooked) 
- 1 clove garlic, minced 
- 1 handful of parsley or cilantro, chopped 
- 1 pinch of salt 
- 1 pinch of white pepper 
- 1 pinch of chili flakes 
- 1 tablespoon white or wine vinegar 
- 2 tablespoons of Extra virgin olive oil 
- 1 cup cherry tomatoes, halved 
- ¼ red onion, thinly sliced 
🍳 Instructions
1. Prepare the dressing
- In a small bowl, whisk together the minced garlic, chopped parsley or cilantro, salt, white pepper, chili flakes, white or wine vinegar, and Extra virgin olive oil. 
2. Combine ingredients
- In a mixing bowl, gently combine the cooked white beans, halved cherry tomatoes, and thinly sliced red onion. 
3. Dress the salad
- Pour the dressing over the salad and gently toss to coat. 
4. Marinate (optional)
- For enhanced flavor, allow the salad to marinate in the refrigerator for at least 30 minutes before serving. 
5. Serve
- Serve chilled or at room temperature. 
🌿 Kuisit Tip
If using canned beans, rinse them thoroughly to remove excess starch. The red onion can be soaked in cold water for a few minutes to reduce its sharpness. Serve with a sprinkle of extra herbs and a drizzle of olive oil for added flavor.
