🫘 White Bean & Tomato Salad

📝 Ingredients (serves 2)
250 g white beans (canned, rinsed and drained, or freshly cooked)
1 clove garlic, minced
1 handful of parsley or cilantro, chopped
1 pinch of salt
1 pinch of white pepper
1 pinch of chili flakes
1 tablespoon white or wine vinegar
2 tablespoons of Extra virgin olive oil
1 cup cherry tomatoes, halved
¼ red onion, thinly sliced
🍳 Instructions
1. Prepare the dressing
In a small bowl, whisk together the minced garlic, chopped parsley or cilantro, salt, white pepper, chili flakes, white or wine vinegar, and Extra virgin olive oil.
2. Combine ingredients
In a mixing bowl, gently combine the cooked white beans, halved cherry tomatoes, and thinly sliced red onion.
3. Dress the salad
Pour the dressing over the salad and gently toss to coat.
4. Marinate (optional)
For enhanced flavor, allow the salad to marinate in the refrigerator for at least 30 minutes before serving.
5. Serve
Serve chilled or at room temperature.
