🍜 Alkalized Spaghetti Ramen with Shrimp Broth & Seared Meat
A bold and satisfying homemade ramen made with spaghetti transformed into chewy noodles using sodium carbonate.
Cooked in a garlic-infused shrimp broth deglazed with meat drippings, and topped with juicy seared pork or beef and soy-marinated eggs.
📝 Ingredients (serves 2)
For the noodles:
200 g spaghetti
1 L water
5 g sodium carbonate (see how to make it here)
For the broth:
2 tbsp olive oil
2 garlic cloves, sliced
Heads and shells from 500 g shrimp
1 L water
Salt and pepper to taste
Optional: small splash of soy sauce or miso
For the meat topping:
200 g pork belly or beef (sliced or cubed)
1 tbsp olive oil
Salt and pepper
For the seasoned eggs (ajitsuke tamago):
2 eggs
1 tbsp sesame oil
1 garlic clove, smashed
1 small piece ginger
50 ml soy sauce
50 ml water
Toppings (choose your favorites):
Chopped scallions
Nori sheets or flakes
Sautéed mushrooms, pumpkin
Grated carrot
Toasted sesame seeds
🍳 Instructions
1. Prepare the sodium carbonate
If you haven’t yet, make your own sodium carbonate by baking baking soda.

2. Alkalinize the spaghetti
Dissolve 5 g sodium carbonate in 1 L cold water.
Soak uncooked spaghetti for 3 hours.
Rinse well, then boil in salted water until al dente. Set aside.
3. Cook the meat
In a wide skillet, heat 1 tbsp olive oil.
Add pork or beef, season with salt and pepper.
Sear until browned and fully cooked (about 6–8 minutes).
Set aside, keeping the browned bits (fond) in the pan.
4. Build the broth
In a separate pot, heat olive oil and sauté the garlic.
Add shrimp shells and cook until orange and aromatic. Season with salt and pepper.
Pour in 1 L water and simmer for 30 minutes.
5. Deglaze with broth
Strain the broth and pour it into the meat skillet to deglaze all the fond.
Simmer 5 more minutes to enrich the flavor. Strain again if needed.
6. Season the eggs
Boil eggs for 7 minutes, cool and peel.
Heat sesame oil, infuse with garlic and ginger for 1 minute.
Add soy sauce and water, remove from heat.
Marinate eggs for at least 30 minutes (or overnight for best flavor).
7. Assemble the ramen
Divide alkalized spaghetti into bowls.
Pour hot broth over the noodles.
Top with sliced marinated egg, seared meat, scallions, nori, mushrooms, or any other toppings you love.
