A warm, flaky croissant filled with creamy scrambled eggs, ripe avocado, tangy goat cheese, and delicate slices of jamΓ³n serrano β the kind of breakfast that feels like a small luxury.
π Ingredients (serves 2)
2 butter croissants (freshly baked, ideally all-butter)
3 eggs
1 tablespoon butter (for scrambling)
1 ripe small avocado (Hass)
60 g fresh goat cheese
4 slices jamΓ³n serrano
Salt and black pepper to taste
Olive oil (optional, to drizzle)
π³ Instructions
1. Warm the croissants
Preheat your oven to 100Β°C.
Slice each croissant open (but not all the way through), and warm for about 3β5 minutes while you prep the rest.
2. Scramble the eggs
In a bowl, beat the eggs with a pinch of salt and black pepper.
Heat the butter in a nonstick skillet over low heat.
Add the eggs and stir slowly with a spatula until just set but still creamy β about 4β5 minutes.
3. Assemble the filling
Slice the avocado thinly.
Remove croissants from the oven and spread or crumble goat cheese inside the base.
Add scrambled eggs, avocado slices, and two slices of jamΓ³n serrano per croissant.
4. Serve
Drizzle with a touch of olive oil if desired, or a crack of black pepper.
Serve immediately while the croissants are warm and flaky.
