Avocado toast with a sunny-side up egg and herbs

📝 Ingredients (for 1 toast)

  • 1 slice of whole grain or multigrain bread

  • 1 ripe avocado

  • 1 egg

  • Fresh basil leaves (or other fresh herbs like parsley or cilantro)

  • 1 tsp olive oil or butter

  • Salt and pepper to taste

  • Optional: chili flakes, lemon juice, “everything bagel” seasoning, sesame seeds

🍳 Instructions

  1. Toast the Bread
    Toast your slice of whole grain bread until golden and crispy. Set aside.

  2. Smash the Avocado
    • In a bowl, mash the avocado with a fork. Add a pinch of salt, a twist of pepper, and a dash of lemon juice if desired. Spread generously over the toasted bread.

  3. Fry the Egg Sunny Side Up
    • In a non-stick pan, heat olive oil or butter over medium heat.

    • Crack the egg into the pan and cook without flipping, until the white is set but the yolk is still runny—about 2 to 3 minutes.

    • For a softer white, cover the pan for the last 30 seconds.

  4. Assemble the Toast

    • Place the fried egg gently over the smashed avocado.

    • Top with fresh basil leaves or herbs of choice.
