🍷 Velvet Toast
Goat cheese and red wine–caramelized onion on toasted bread — sweet, savory, creamy perfection.
📝 Ingredients (for 2 toasts)
2 slices of sourdough or whole grain bread
1 small red onion, thinly sliced
2 tsp brown sugar or honey
1/4 cup red wine (dry or semi-dry)
Olive oil
80–100 g soft goat cheese
Salt and black pepper to taste
Optional: fresh thyme or rosemary
🍳 Instructions
1. Caramelize the onion
Heat a splash of olive oil in a pan over medium-low heat.
Add the sliced red onion and a pinch of salt. Cook slowly for 10–12 minutes, stirring occasionally, until softened.
Sprinkle in the brown sugar or honey and stir well.
Add the red wine and continue to cook for another 5–7 minutes, until the liquid reduces and becomes glossy. Remove from heat.
2. Toast the bread
While the onion finishes, toast the bread until golden and crisp.
Spread a thick layer of goat cheese on each slice while still warm.
3. Assemble the toast
Spoon the red wine caramelized onion generously over the goat cheese.
Sprinkle with black pepper and fresh herbs if desired.
4. Serve and enjoy
Serve warm or at room temperature as a savory-sweet snack, breakfast, or appetizer.
