🫒 Mediterranean Morning Toast

A simple, healthy, and delicious option for breakfast.

📝 Ingredients (for 2 toasts)

  • 2 slices of whole grain bread (sourdough or multigrain works great)

  • 2 eggs

  • 1/2 cup homemade hummus (see recipe below)

  • 6 black olives (pitted), sliced

  • 1 tsp mixed seeds (sesame, chia, or poppy seeds)

  • Salt and pepper to taste

🧄 Homemade Hummus (optional with or without tahini)

Ingredients:

  • 1 cup cooked chickpeas (or canned, rinsed)

  • 2 tbsp olive oil

  • 1 garlic clove

  • Juice of 1 lemon

  • 2 tbsp water (adjust to desired texture)

  • Salt to taste

  • (Optional) 1 tbsp tahini

Preparation:
Add all ingredients to a blender or food processor.

Blend until smooth and creamy.

Adjust texture by adding more water or olive oil if needed.

🍳 Instructions

1. Boil the eggs

  • Place the eggs in a pot and cover with cold water.

  • Bring to a gentle boil over medium heat. Once boiling, set a timer for 9 minutes for fully cooked yolks.

  • Transfer to a bowl of ice water or rinse under cold water. Peel and slice.

2. Toast the bread

  • Toast the slices of whole grain bread until golden and crisp.

3. Spread the hummus

  • Spread a generous layer of hummus over each slice of toast.

4. Add the toppings

  • Arrange the egg slices over the hummus.

  • Add the sliced black olives on top.

  • Sprinkle with mixed seeds, salt, and pepper to taste.

5. Serve and enjoy

  • Serve immediately while the toast is warm and the toppings are fresh.

🌿 Kuisit Tip

You can switch it up with cucumber slices, microgreens, or a dash of smoked paprika for added color and flavor.
