🍆 Tortang Talong Omelette

A smoky, savory Filipino omelette made with grilled eggplant and fluffy eggs—comfort food in its simplest form.

📝 Ingredients (serves 1)

  • 1 medium eggplant

  • 2 large egg

  • 1 small clove garlic, minced

  • 1 tsp onion, finely chopped

  • 2 spoons of soy sauce

  • pepper to taste

  • Oil for frying

🔥 Optional add-ons

  • A few diced tomato pieces

  • A spoonful of cooked ground meat or tuna

🍳 Instructions

  1. Grill the eggplant
    • Roast the eggplant over an open flame or under the broiler until the skin is fully charred. Let cool, then peel the skin off, leave the stem on.

  2. Flatten it
    • Place the eggplant on a plate and gently flatten with a fork without tearing it.

  3. Beat the egg
    • In a bowl, beat the egg with garlic, onion, soy sauce, pepper, and any extras.

  4. Dip and fry
    • Heat oil in a non-stick pan. Dip the eggplant into the egg mix, making sure it's well-coated.

    • Place it in the pan and pour the rest of the egg on top. Fry each side for about 2 minutes until golden.

  5. Serve it hot
    • Enjoy with steamed rice or some toasts and a side of ketchup.

🌿 Kuisit Tip

Prick the eggplant with a toothpick before roasting to prevent it from bursting!

No grill? You can roast the eggplant directly over a gas stove using tongs or even in the microwave (on high (800W–1000W) for 4–6 minutes, turning halfway, until soft).
